11 Healthy Vegetarian Crock Pot Recipes

I am so excited about this post for two reasons: first, because I have a serious obsession with my slow cooker and second, because I have an even more serious obsession with international foods. A quick word on slow cookers: how great is it that you can just toss a whole bunch of stuff in it in the morning and then come home and, almost magically, all that stuff has transformed into a delicious dinner? It’s kitchen wizardry and I couldn’t love it more. It makes my life easy and makes me look like a better cook than I am.

I love my slow cooker but I have had trouble finding vegetarian crock pot recipes. These are some awesome ideas!!

The other thing I am super excited about is our little culinary trip around the world (with our slow cookers! Because we don’t have to worry about baggage fees or extra weight today). Our tour will bring healthy vegetarian recipes from all around the world to your slow cooker.
