So, it’s been a while.
I tried to keep up, but getting back to the US has been a bigger transition than I expected. We flew from Bali to Hong Kong where we stayed for a few days. From Hong Kong we flew to Tokyo and from there to San Diego. There is a 16 hour time difference between San Diego and Tokyo and it took us a long time to get onto the right timezone again. Not sleeping for a few days will really screw you up.
However, we are finally feeling like humans again. We caught up on our sleep, caught up with family and did all kinds of un-fun things like purchase new car and health insurance and get new phones. Besides gorging on really good Mexican food here in San Diego we have also been enjoying the bounty of the summer- eating tons of fresh strawberries, peaches and corn. Yum!
This super easy jam was inspired by a plethora of strawberries and chia seeds. And then I threw in a peach just because I love them. Really, any fruit would be awesome in here, so feel free to experiment.
- 2 Tbsp Chia Seeds
- 1 cup Strawberries (or fruit of choice)
- 1 Fresh Peach or Nectarine
- 1 Tbsp Honey
- Pinch of Salt
- Wash and slice the strawberries and peach. They don't have to be perfect, just a rough chop will do.
- Combine the strawberries, peach, honey and salt, mash lightly with a spoon.
- Allow the strawberries (and any other fruits you may want to use) to macerate in the honey and salt for at least 10 minutes. This will draw the moisture out of them.
- Add the chia seeds and mix well. Allow the jam to sit in the refrigerator at least one hour but preferably overnight. Serve on toast or pancakes or anything awesome!
