12 Fun Cinco de Mayo Party Recipes

Cinco de Mayo is legit one of my favorite holidays so you know I am coming to this fiesta armed with some delicious and super fun recipes! Some of them take a little longer (but are worth the effort!) while others are a snap to put together; I even have a couple of recipes for those of you who are not so keen on hot and spicy food.

As you go through the roundup you will notice that avocados feature prominently in most of the recipes; that was not a deliberate attempt. It just so happens that they are a huge (and delicious) part of Mexican cuisine. They taste great and pack plenty of heart healthy fats so don’t be afraid to use them. You’ll be amazed at how many different ways avocados are incorporated seamlessly into these recipes.

Most of the recipes featured in this post have some fun and unique twists so they are not strictly traditional Mexican dishes.  I invite you to try them out and let me know what your thoughts are in the comment section.

Crispy Chicken Mini Tacos

This recipe is super easy to make and a great way to get kids involved in cooking. So gather the kids in a mere 55 minutes you’ll be munching away on this crispy snack. You can get the recipe here.

Crispy Chicken Tortilla Rollups

The creaminess of the avocado-lime dipping sauce is the perfect compliment to the crispness of the chicken tortillas. If you are not a fan of hot and spicy meals, simply leave out the jalapenos; it’d still taste great. Get the recipe here.

Shrimp Ceviche

Something about this dish reminds me of spring; perhaps it’s the bright colors or maybe it’s just the zing of fresh lime juice on the shrimp, cucumbers and avocados (oh yes, the recipe also calls for avocados)!

Mexican Steak Cobb Salad With Cilantro Vinaigrette

Mexican food does not joke when it comes to avocados? If I have not convinced you yet, may I present to you exhibit D (or is it E?) Anyway, this recipe gives you the perfect opportunity to enjoy a taste of Mexican delicacy in a lighter, healthier way.

Salsa Fresca Pico-de-Gallo

The author of this recipe advocates the use of aluminum foil to help the food cook evenly and keep it moist. Salsa Fresca is a popular Mexican dish and I love the twist this recipe puts to it.

Sombrero Fruit Plate

Definitely not a traditional recipe but so cute. If you are having a lot of guests over, this sombrero fruit plate will be the perfect way to wow them with your food presentation skills. Get instructions here.

Give the fried foods a rest this time around and go the healthier route with these oven-baked fajitas. With all the calories you may amass during the fiesta, you will be glad you made this choice.
