Summery Nectarine & Tomato Salad in Sofia


Being back in summer in Bulgaria has some wonderful advantages, namely the fruits and vegetables. I miss the winter squash, but getting plenty of fruits and veggies while living in a hotel room is easier during the summer. We have had some really incredible late summer/early fall weather while we have been here, its been in the mid 70’s all week, warm enough to wear shorts but not so hot that we are sweaty and miserable. There is plenty of stuff to explore since this city dates back over 6000 years and has Roman ruins just about everywhere, from the basement of hotels to the metro stations. It is a beautiful city, full of interesting history and we are very much enjoying it.

We picked up some tomatoes, nectarines, lettuce, basil and goat cheese at the veggie stalls near us and it only cost about 5 leva, or about $3.30 for everything. The food prices here are super cheap, it’s wonderful!


This simple salad highlights all the delicious flavors of summer. Don’t be afraid to pair nectarines (or peaches!) and tomatoes, they go surprisingly well together and really make this salad pop. Studies have shown that vinegar actually helps to prevent blood sugar spikes after eating, and olive oil helps your body to absorb all that fat soluble vitamin goodness in the tomatoes, basil and nectarines. High in fiber, lycopene and flavor, this salad tastes just like late summer!


Summery Peach and Tomato Salad
Serves 2
1 Nectarine
1 Very Ripe Tomato
Small handful of basil
1 TBSP Apple Cider Vinegar
1 tsp Olive Oil
2 oz Goat Cheese, crumbled
4 cups Leaf Lettuce or lettuce of your choice

Wash and chop nectarine and tomato.
Wash and chiffonade basil
Wash lettuce and dry thoroughly. In a small bowl combine nectarine, tomato, basil, olive oil and vinegar. Toss lettuce with basil and divide amongst 2 bowls. Evenly split nectarine/tomato topping between lettuce bowls and enjoy!
