Microwaves are a tough subject, people feel adamantly one way or the other about them. They love them or they hate them and there is not really a big in between crowd- I admit I was one of those people that turned my nose up at anything made in the microwave (and I will never be ok with bacon made in the microwave. Never). Except for a one week period when one of my cousins and I found an old microwave cookbook and tried to cook everything in it, I tried to avoid using them as much as possible.
When I got my first big girl desk job I found microwaves to be a necessary evil for reheating lunches and the occasional afternoon snack of popcorn. I have further refined my microwave culinary prowess during our trip out of necessity. We had a nice kitchen with a gas stove during our time in Monteverde, Costa Rica and the hot plate is working out pretty well here in Buenos Aires, but everywhere in between we have to get creative with our microwave, or sometimes with no cook options as well. I have been surprised at how versatile the microwave has proven itself and how good the food from it can be.
This cobbler is a quick, healthy and delicious dessert or snack. Requiring very little equipment (a microwave safe bowl or coffee mug and a spoon) and few ingredients (fresh fruit, sweetener and granola) this cobbler is a healthy snack anytime, anywhere. It is sweet enough that it works as a dessert and it is one of the easiest, fastest dessert recipes out there so next time you are jonesin’ for something a little sweet after dinner, keep the ice cream in the freezer and give this a try. It is easily adaptable to whatever fruit you have on hand, either on the counter or in the freezer- berries, apples, peaches, pears- anything you would put in a pie could easily be put in this cobbler.
Individual Microwave Apple Cobbler
Serves 1
1 small Apple, cored and chopped small
3/4 tsp honey or sweetener of your choice
1/2 tsp water
2 rounded Tablespoons Granola
Optional Ingredients:
Raisins, cinnamon, vanilla, shredded coconut, cocoa nibs
In a small, microwave safe bowl or coffee mug combine the chopped apple, honey and water. Add any or all of the optional ingredients you want to use. Microwave on high 3 minutes, fruit should be fairly soft. Remove, stir and sprinkle granola evenly on the top of the apple. Return to the microwave and microwave 90 seconds longer.
Top with a dollop of banana soft serve or just enjoy as is!
**Notes:
Try substituting orange juice for the water in the recipe
If you are using frozen fruit, no need to thaw, just add it straight from the freezer to the bowl, but do omit the water or it will be too liquidy.
