A Healthy Spin on a Favorite Guilty Pleasure!

While we were in Sofia, I had one of the best donners I have ever had. Donners are my guilty pleasure food in Europe. The first one I ever had was in the Latin Quarter in Paris with my sister and cousins, I was hooked! Donners come in various shapes and sizes, but there are a few things that they all have in common. The meat comes from the big, rotating gyro meat on a stick in front of a broiler. So fatty and awful for you, yet so, so delicious. The meat is put in a pita and topped with tzatziki, onions, tomatoes and cucumbers. In a perfect, guilty pleasure world, they are also topped with fries and occasionally ketchup. I have also tried them spicy, seen them with shredded cabbage and in Brasov, Romania, we even got […] Continue Reading

The Azure Window & Picnic Pizzas

We went on a short bus ride from the village we are staying in, Marslforn, to a geographic wonder know as the Azure Window today. The Azure Window is an incredible rock formation surrounded by a landscape that, I imagine, is similar to the moon. If the moon was also very beautiful and in the Mediterranean Sea. It was absolutely breathtaking. We then continued our journey by walking the several kilometers back to our apartment and stopping at various sights along the way. We stopped at an amazing church in the middle of nowhere, salt pans where seawater is dried to harvest the salt and a gorge that opens into […] Continue Reading

Leek, Zucchini & Pancetta Frittata

We met an awesome couple from Australia while we were in Krakow. We had a lot of similar views on food and for their 4 1/2 month trip they also rented apartments with kitchens to help keep costs down. While reminiscing about our college experiences, we got to talking about foods college kids eat. Ramen is, apparently, a college diet staple in the US as well as Australia. The woman we met, LeAnn, was appalled at the food some of her friends ate and worked really hard to show them that ramen wasn’t the best or cheapest […] Continue Reading

One Pot Lima Bean & Eggplant Bake

This week is full of adventures and we are having a great time on the island of Gozo. While snorkeling yesterday we saw an octopus skulking around in the rocks! I have never before seen a live octopus.
In other adventure news, I learned how to light the gas oven in our apartment. I love cooking with gas and was so excited to see the gas stove here, but I have never lit a gas oven with a match. I have always used the kind that light automatically, and had visions of letting the gas run for too long and blowing up the entire place […] Continue Reading

Melon Breakfast Bowls and a bit about Potassium

I can’t wait until we get back into an apartment with a kitchen. I am really hoping for an oven as well, fall weather is starting to hit and I am dreaming about pumpkin again! However, we are in hotels at least for the next few days. The hotel we are in currently here in Bratislava does not have breakfast either, so we have to get creative again. Fortunately, there is a small produce stand near our hotel where we found some of the last melons of summer […] Continue Reading
