Wash and slice the strawberries and peach. They don't have to be perfect, just a rough chop will do.
Combine the strawberries, peach, honey and salt, mash lightly with a spoon.
Allow the strawberries (and any other fruits you may want to use) to macerate in the honey and salt for at least 10 minutes. This will draw the moisture out of them.
Add the chia seeds and mix well. Allow the jam to sit in the refrigerator at least one hour but preferably overnight. Serve on toast or pancakes or anything awesome!
