Banana Spring Rolls

Ingredients
  • 1 pkg Rice Paper- the refrigerated kind
  • 2 tsp Sesame Seeds, toasted
  • 2 Tbsp Unsalted Peanuts, chopped and toasted
  • 2 Dates, finely chopped
  • 2 Very Ripe Bananas
Instructions
  1. Slice and lightly mash bananas and dates. Add sesame seeds and peanuts. Mix well.
  2. Take a sheet of rice paper (leave the rest covered in a damp paper towel to prevent them from drying out) and lay it in front of you with one corner towards you (it should be in the shape of a diamond in front of you).
  3. Spoon about 2 tsp of banana mixture onto the bottom corner, about 1 inch from the bottom of the corner. Fold the corner up and over the mixture, then fold the corner (with the mixture) up once more.
  4. Fold the sides of the rice paper in, like an envelope. Finish rolling the stuffed corner up.
  5. Seal the edges with a splash of water.
  6. Repeat until you are out of filling.
  7. Heat oil to 350F. When it is nice and hot, place the spring rolls into the oil (if you have a lot, do this in 2-3 batches). Allow them to cook for about 1-2 minutes, flipping them with tongs to allow them to brown evenly.
  8. When they are golden brown all over, remove them from the oil and place on a paper towel to drain. Serve immediately with ice cream!
