Move the peppers, onions and pineapple to the sides of the wok. Add the egg, scramble quickly and then move the egg to the side.
Add the black rice, spread it out and allow it to cook un-disturbed for about 1 minute, then add the leftover chicken and veggies and the coconut sauce sauce. Stir everything back together and, stirring often, allow the chicken to get hot and then serve sprinkled with green onions!
